After waiting all weekend to try it out, I am thrilled that it was worth the wait because I love how this healthy baked lemon chicken turned out! It is juicy, tender, savory with a hint of sweetness, and so so easy to make. I served it with pan-roasted garlic asparagus and it was absolute heaven.


Nice recipe but I took a short cut on that (As I am a lazy cook always looking for a short cut)I used the meat of a rotisserie chicken, dissected, de boned and skinned. Baked for 20 Minutes while dipped in a mix of olive oil, lemon juice, chicken broth, garlic, lemon zest and slices. dded black pepper after baking. tastes good and with minimal prep time.
